Hidden Treasure Cookie
Are you ever indecisive about what dessert to eat? Well look no further, because this cookie is a 3 in 1 combo that will tick all the boxes and then some. Decadent? Yes. Rich? Yup. Oooey gooey goodness? Correct. Probably shouldn't exist for the sake of our waistlines and sanity? Maybe.
I'm sure I'm not the first to come up with something like this, but I created this a few years ago when I wanted to make a cookie that tipped past the normal scale and was something most people hadn't had before (at least not all at once). It combines 3 of my favorite things: oreos, peanut butter cookies, and chocolate chip cookies, into one magical bite.
When I first tried to make this, I just did a normal chocolate chip cookie, with an oreo inside - but I found the only way I could get them to keep their shape while baking was to use a muffin tin, which just ended up being extra work. The solution - peanut butter. Unlike chocolate chip cookies, pb cookies don't lose their shape (much) when baked. So for making something like this it was an ideal fix, that just introduced another delicious element.
Now making these does take a little extra tlc because you have to create each one by hand, rather than scoop and plop onto a baking sheet. But I promise you they are worth it, plus people's reactions to them will be worth it. I find most people who consume them exhibit 4 of the 5 stages of grief - denial: "what is this? this shouldn't exist", anger: "how could you give this to me, you know I'm on a diet", bargaining: "maybe one won't hurt", acceptance: "omg fcgvhbjknl;kfl;jsa [indecipherable speech, due to trying to speak with half a cookie in their mouth]".
So enjoy but don't say I didn't warn you...
1 cup butter (unsalted, room temperature)
1 cup peanut butter (250g)
1 cup sugar
1 cup brown sugar (packed)
2 eggs
2.5 cups flour
1 tsp baking powder
1/2 tsp salt
1.5 tsp baking soda
1 tsp vanilla
2 cups chocolate chips
1 package oreos
2 cups white chocolate
sprinkles
Prep Time: 1.5 hr
Cook Time: 30 min
Yield: ~25 cookies
Instructions
Cream butter, peanut butter and both sugars in a bowl
Add eggs and beat until well mixed
Add dry ingredients: flour, baking powder, baking soda, salt (optional: sift all these together first and then add)
Add vanilla, mix well until combined
Stir in chocolate chips
Refrigerate for 30min-1hr
Preheat oven to 375°F
Prepare the cookies by taking a golf-ball sized piece of dough and forming a shape around an oreo (it's helpful to use excessive dough, make the shape around the oreo, then remove the excess and pat into desired shape).
Line baking sheet with parchment and arrange cookies, keeping around 2 inches between each. (I typically can fit 9 on an standard size baking sheet)
Bake for 10 min, or until golden brown (cooking time may vary based on the size of your cookies)
Remove from baking sheet and leave to cool on cooling rack (at least 15 min)
Once cooled, melt white chocolate and drizzle on top
Add sprinkles while chocolate is still melted
Let cool (again), share with others and enjoy or hoard all to yourself!
