This simple yet tasty sauce is the perfect fresh addition to almost any Greek cuisine and beyond. When I’m not cooking and order Greek food, this is the one thing I almost always order extra of. Besides being the ultimate gyro topping it is a great dipping sauce for sides.

You can buy this pre-made in some grocery stores, but preparing it fresh allows you to tweak it and make it your own - like it extra lemony? dilly? cucumbery? add more of anything you want while staying true to the core flavors. Plus, turns out it is pretty easy to make and you can double up the recipe if you want extra or feel like sharing.

INGREDIENTS
7 oz full fat (5%) greek yogurt
1 tsp minced garlic
½ cup grated cucumber (approx 1 small cucumber)
1 tsp salt
1.5 tsp lemon juice (½ a lemon)
1.5 tbsp olive oil
1 tsp dill weed

Prep Time: 10 min.

Servings: 5

Instructions

  1. Shred cucumber using standard grater - doing this over a colander helps with the initial draining.

  2. Take shredded cucumber In handfuls, over a sink or bowl squeeze the excess water from cucumber

  3. Mix all ingredients, except the dill, together in a small bowl 

  4. Let sit 30 min+ before servicing if possible, to allow flavors to combine

  5. Add dill just before serving - this helps avoid overpowering it with dill flavor

  6. Adjust any seasoning to your preferred taste and mix well

  7. Serve with zucchini fritters, pita, chicken shawarma, gyros etc.
