French Toast
When I was little I didn’t really care too much for french toast - we were a pancakes family through and through, and somehow the idea of dipping bread in eggs just didn’t seem appealing to my 7 year old brain. But living in NYC as an adult has given me a new appreciation for brunch (iykyk) and subsequently this dish, having now experienced several variations of fairly decadent french toast.
Now, when I’m feeling fancy on a weekend this is one of my favorite things to make as I can achieve something quite tasty and seemingly luxurious without too much effort.
Tips:
Using the right bread is key! If you want restaurant quality french toast use brioche or challah bread. It has the perfect density to absorb the mixture, while not falling apart. Bread is basically the whole dish, so this one seems like a no brainer, but I have tried (and failed) over the years using other options to little satisfaction.
Not sure if the perfect french toast bread dipping pan exists, but some great stand ins are: a shallow square tupperware, brownie or 9x9 pan, or a pie plate.
When in doubt, add more cinnamon. This may just be a me thing (sometimes I feel like cinnamon is the garlic of baking)….but add an extra dash for good luck.
Serving with fresh fruit totally amps up the presentation and the deliciousness. Berries & bananas are my go to options here - but choose whatever is your favorite.
Note: the ingredients quantities are for serving only 2 people - adjust accordingly if you plan on making more!
5 pieces brioche bread
2 eggs
½ tsp vanilla extract
1 tbsp sugar
2 tbsp butter
Dash of nutmeg
½ tsp cinnamon
3 tbsp milk
Top with: maple syrup, powdered sugar
Serve with: strawberries, bananas or other fruits
Prep Time: 10 min.
Cook Time: 10 min.

Instructions
Whisk eggs and milk together in a shallow container (wide enough to lay bread flat in)
Melt butter (microwave for 20 seconds) and whisk into eggs & milk
Add all other ingredients (sugar, vanilla, cinnamon, nutmeg) to mixture and whisk together
Heat griddle or pan on med-low heat (oil/butter pan if it is not non-stick)
Place one slice of bread flat into the mixture, and flip to coat thoroughly
Cook until golden (approx 2-3 min depending on your heat) then flip and cook the other side
Sprinkle some powdered sugar and pour some maple syrup on top to complete!
