Chicken & Broccoli

Not quite as easy as takeout, but surprisingly close. This one has been a classic in our household since we made it for the first time almost 5 years ago. We pretty much always have rice and the sauce/marinade ingredients on hand, so it makes for an easy grocery trip since we just need to grab the fresh stuff (ie. chicken and broccoli). Plus while it may look complicated at first glance, it is actually one of the quickest dinners to make - only takes 30 min to whip it all together.

If you are just making it for two - I recommend cooking only half the rice, and making fresh rice when you want the leftovers. Otherwise this one is very leftover friendly, the chicken & broccoli can be reheated in the microwave and taste as good as the first day.

INGREDIENTS
1.5 lb chicken breast
1 head/12 oz. bag of broccoli
2 cups jasmine rice
1 tbsp vegetable oil
MARINADE:
2 tbsp vegetable oil
1 tbsp water
1 tbsp soy sauce
1/2 tsp baking soda
1 tsp sugar
2 tsp cornstarch
SAUCE:
1 tbsp vegetable oil
2 tbsp water
1/3 cup soy sauce
1 tbsp rice vinegar
2 tbsp brown sugar
1/2 tsp sugar
2 tbsp flour
4 cloves minced garlic (~ 3 tsp)

Prep Time: 15 min

Cook Time: 15 min

Servings: 5

Instructions

  1. Prepare rice in pot or rice cooker.

  2. Trim and cut the chicken into bite size pieces (~1.5 inch)

  3. Whisk together the marinade ingredients in a small bow and pour over the chicken. Mix well and let sit while preparing the sauce.

  4. Whisk together the sauce ingredients in a small bowl (use the marinade bowl to save yourself some effort on dishes ;)

  5. Heat 1 tbsp vegetable oil in a wok or large skillet over med-high heat

  6. Add chicken and pour in half of the sauce mixture, sauté until chicken is golden brown (about 8-10 min. depending on the size of your chicken pieces).

  7. While chicken is cooking - prepare the broccoli. If you are using a head - cut it into just the floret pieces. Steam it - a bit under what you would normally do, since it will still cook a little once it is mixed in.

  8. Add cooked broccoli and remaining sauce to the chicken and mix to combine. Reduce heat and cook for another minute.

  9. Serve over rice.
